Keemun tea is produced exclusively in qimen, in the Huangshan region. This black tea is also known as "qimen Hongcha", with the first term relating to its origin, and the second term "Hongcha" which in Chinese means "red tea", a type of tea that in the West is known as black tea: in China is called red tea in reference to the color of the liquid in the cup, and not based on the color of the dry leaves.
Keemun black tea is often known as "Keemun Congou". The term "Congou" is a colonial period, derived from the Chinese word "Kung Fu" or "Gongfu". The reason why "Congou" is often part of the name is because the original Keemun tea is the ideal one for the Kung Fu -style tea ceremony.
The production of Keemun black tea is an elaborate and complicated process. The collection takes place only in spring and summer, and only the upper bud and the first two leaves of the plant are collected. Once the leaves and buds have been detached, the most tender leaves are hand chosen to create a quality keemun tea. This process is called "refinement". The selected leaves then pass through an elaborate fermentation process that changes its color from green to dark brown.
If prepared correctly, this Chinese tea has a light red color and a smoked aroma with floral shades. The flavor is very soft and smooth, and continuously changing. This black tea can be infused several times, in order to taste the flavors and aromas that change.
INFUSION: 3-4 minutes at 90-95º
Dosage: 3-4g for 200ml of water

Depending on the variety, black tea has several degrees of intensity. The lighter the tea is, the shorter the infusion time must be. In general, the tea left in infusion up to 2 minutes has a stimulating action, while if you exceed 5 minutes the effect will be relaxing.
Black tea in general contains tannins, minerals, vitamins, essential oils and caffeine: the latter is slowly released by the body, unlike what happens with coffee. The tannins have a soothing effect on the stomach.
Drinking black tea regularly brings long -term benefits for the heart: this tea in fact reduces the risk of cardiovascular diseases and heart attacks. In addition, it can protect against Parkinson's disease and various forms of cancer including the skin (it is now widespread that this ancient drink offers protection from UV rays), lung, stomach, pancreas, prostate, and even to ovaries.
